Who we are
We’re Michael Cella and Chaynce Pelio—professional chefs and longtime friends who met in 2022 while working at Blooming Hill Farm, one of the Hudson Valley’s premier farm-to-table restaurants and event venues, located on a working organic farm in southern Orange County, NY.
During our time as Executive Sous Chefs at Blooming Hill, we had the privilege of honing our craft under Michelin-trained chef Robert Zwirz (Babbo, Lupa, Trattoria One Fifth) and working alongside acclaimed Michelin-starred chef TJ Steele of Claro—experiences that profoundly shaped our culinary vision and philosophy. These formative years instilled in us a deeper understanding of what it means to cook with purpose, lead with hospitality, and stay rooted in authenticity.
The White Wolf is the natural evolution of our shared passion for food, artistry, and meaningful connection.
